My temperature gauge is bizzare. Sometimes on start - it shoots to the right - into the red zone and then returns to dead. Sometimes it doesnt. Usually it hovers around very very cold and creeps its way up to 1/4 if the car is very hot - I.E. the radiator fan has cut in.

Coolant has been recently changed, is nice and clean and has the correct amount of anti-freeze... it's been bled as specified in the handbook. It has a new radiator cap and no leaks.

Any clues?

Sound normal.
These cars are well known for bad earthing.
Major earthing points around the car get corroded and give bad readings.

I'm not sure but I'd guess a bad ground. when one of my ground wires burnt up in my dash fire all the gauges were going all the way to the right.

if this happens right when it starts then obviously the car can't overheat that fast.

You might have a loose piece of aluminum foil insulation cover at the back of the head that's occasionally making contact with a sensor connection.

Also there is a mass of small brown ground wires that connect with the heavy ground on the top of the engine from the firewall by the coil.
This is where my short was.
