It was about really cold out the other day (0 degrees) when i was driving my car home, and my thermostat was frozen shut causing my car to overheat. It was pegged out for about 1-2mins until i pulled into a gas station and turned it off I had to wait about 30mins until the thermostat thawed out.
I am now paranoid about any damaged it may have caused. I think my car sounds fine, but it is really hard to tell due to my bad motor mounts, suspension, the cold making my car creak and rattle, and my paranoia
Are there any things i should look at in particular?

When is the needle pegging? Was it during start it up, when the engine cold? If so, then you have a grounding issue that causes the gauge to peg in the red. Try tapping on the gauge... if that effects it, then you need to pull the gauge and clean the grounds.

If the engine actually did overheat for two minutes then it's probably toast... but you need to actually verify that, since the gauges on these cars can give false readings.

Also, even if you have the tiniest bit of anti-freeze in the coolant the water can resist freezing until -5... and even then it will take days for it to freeze. So, it's unlikely that your coolant will freeze, unless you have no anti-freeze and living in where the temperature constantly stays well below zero for days on end.
