I made up most of the latch assembly today. I used hatch latches just like the factory.
The hatch pins are a little too short so I am going to use 1/2" bolts 1/2" long and drill and tap the thread for the pins in the center.
I have the rods and pivot mechanism from the hatch as well that I am going to mount. I will need to shorten the two rods and figure out a way to attach the hood cable to it.

And I am going to use the stock safety catch but I need to mount it a little further forward and turn it around. I took the pin out of it so it will only be a safety catch and it will catch at what is remaining of the original hood latch area on the body.
